Chanterelles like to grow around the roots of pine, oak and birch trees. Picking chanterelles is a job that requires experience and skill, and is usually done from summer to autumn each year.


The best time to pick chanterelles is in the morning, when the dew is still wet and the mushrooms are at their freshest.  Our pickers will select the best growing areas to ensure the quality and quantity of mushrooms.  Picking chanterelles requires the use of a special mushroom knife.  When picking, gently cut the mushrooms from the ground to avoid damaging the roots to ensure the growth of the next batch of chanterelles.Pickers must be experienced enough to identify mature and pest-free chanterelles. The canopy of chanterelles is funnel-shaped, golden or orange in color, and has a unique fruity aroma. After picking, chanterelles need to be processed quickly to remove dirt and impurities. Usually, a clean brush is used to gently brush off the soil on the surface of the mushrooms, and then preliminary sorting is performed.
